Type of wine: D.O.C Maremma Toscana Cabernet Sauvignon
Area of Origin: Directly from our vineyards in Fonteblanda, this grape has been planted for the first time in 1999 in a clay area, poor of texture.
Cultivation: Raising with bilateral spurred cordon in 4000 stumps pro/H. Bud charge goes from 6 to 8 per plant.
Grapes: Cabernet Sauvignon 100%
Harvest: This particular harvest usually starts between the second and the third week of October and it is subdivided in two distinct period of time, both in a distance of a week; in this way we can selected the best blooming grapes of cabernet.
Vinification: The grape is carried in steel tank for three week after its rasp pressing, and its fermentation; during this time, we often make the so-called délestage, according to different time span and intensity in order to obtain a perfect fermentation.
Maturation: The wine goes, after its pressing, in new french barrels where it begins the probiotic fermentation staying on its lees for 12 months. At the end of this period, the wine goes in tank steel for two other months and finish its process in bottle.
Refinement: The wine rests for other 12 months in cellar before selling.
Color: Intense ruby red with purple highlights.
Bouquet: Ripe red fruits matched with vanilla flowered and toasted scents.
